This one-pan harvest chicken dinner is an easy family dinner that everyone will enjoy!
Ingredients:
- 2 lbs organic, bone-in chicken thighs
- a bag of Brussel sprouts
- 1 large sweet potato
- 1 organic Granny Smith Apple
- fresh sage
- fresh thyme
- 2 shallots
- 1 clove of garlic
- 2 tablespoons olive oil + extra for seasoning
- 1 tablespoon red wine vinegar
- salt and pepper
Directions:
1. Preheat oven to 450 degrees Fahrenheit.
2. Marinate chicken in 2 tablespoons olive oil, 1 tablespoon red wine vinegar, fresh cute herbs, and garlic. Cover the dish and let sit for a minimum of 2 hours.
3. Chop all vegetables (+ the apple) into bite-size pieces and distribute them evenly across a cookie sheet. Drizzle with a generous amount of olive oil.
4. Season with salt and pepper.
5. Top with the marinated chicken pieces.
6. Roast in oven for 35 minutes; then broil for 5 minutes.
