Mexican Hot Chocolate 'Sun Cake'

This moist and delicious chocolate cake surprises with hints of cinnamon and cayenne.


Ingredients:

  • 1 stick unsalted butter

  • 0.5 cups dark cocoa powder

  • 1.5 cups cane sugar

  • 1 cup all-purpose flour

  • 3 eggs

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground cayenne pepper

  • 1 teaspoon vanilla extract

  • A dash of salt


Directions:

  1. Preheat your oven to 350 degrees Fahrenheit.

  2. Butter a 9-inch springform cake pan and line with a round piece of baking paper.

  3. Melt the butter in a saucepan and set aside.

  4. Whisk in the flour, sugar, cocoa, cinnamon, cayenne, and vanilla.

  5. Transfer mixture to a stand mixer and whisk in 3 eggs. Mix for approximately 3 minutes.

  6. Pour the mixture into the cake pan.

  7. Bake for 20-25 minutes (I did 22 minutes in my oven).

  8. Once baked, let the cake cool down for at least 30 minutes. Carefully, transfer your cake to a plate. Dust with powdered sugar OR a mixture of cinnamon, cane sugar, and cayenne.
