Marble Cake

My mom used to make me this cake for my birthdays. Definitely a kids' favorite!


Ingredients:

  • 1.5 sticks of unsalted butter

  • 3/4 cup cane sugar (+ 1 additional table spoon cane sugar)

  • 1/2 teaspoon Vanilla extract (or fresh vanilla)

  • A dash of salt

  • 4 medium organic eggs

  • 2 cups of flour

  • 2 teaspoons baking powder

  • 150 mL oat milk

  • 1/4 cup cocoa powder

  • 1/4 cup semi-sweet chocolate chips (optional)


Directions:

  • Preheat your oven to 350 degrees Fahrenheit.

  • Butter a loaf pan (9 x 5 x 3 inches) - I also like to add some breadcrumbs. 

  • Using a stand mixer, combine the softened butter, vanilla, 3/4 cup of sugar, and a dash of salt. Mix for 5 minutes.

  • Slowly, add the eggs one egg at a time. Mix for 3 minutes.

  • Add the flour and baking powder. Quickly, add 100 mL of oat milk.

  • Remove 1/3 of the dough and set aside.

  • Add 1/4 cup of cocoa powder, (1/4 cup of chocolate chips) and one table spoon of sugar to the remaining 2/3rds of the dough.

  • Add half of the dark dough to the buttered loaf pan. Cover this half with the light dough. Finally, cover the light dough with the remaining dark dough.

  • Use a fork to create a swirl (this will be the “marbling effect”).

  • Bake for 1 hour.
