My mom used to make me this cake for my birthdays. Definitely a kids' favorite!
Ingredients:
1.5 sticks of unsalted butter
3/4 cup cane sugar (+ 1 additional table spoon cane sugar)
1/2 teaspoon Vanilla extract (or fresh vanilla)
A dash of salt
4 medium organic eggs
2 cups of flour
2 teaspoons baking powder
150 mL oat milk
1/4 cup cocoa powder
1/4 cup semi-sweet chocolate chips (optional)
Directions:
Preheat your oven to 350 degrees Fahrenheit.
Butter a loaf pan (9 x 5 x 3 inches) - I also like to add some breadcrumbs.
Using a stand mixer, combine the softened butter, vanilla, 3/4 cup of sugar, and a dash of salt. Mix for 5 minutes.
Slowly, add the eggs one egg at a time. Mix for 3 minutes.
Add the flour and baking powder. Quickly, add 100 mL of oat milk.
Remove 1/3 of the dough and set aside.
Add 1/4 cup of cocoa powder, (1/4 cup of chocolate chips) and one table spoon of sugar to the remaining 2/3rds of the dough.
Add half of the dark dough to the buttered loaf pan. Cover this half with the light dough. Finally, cover the light dough with the remaining dark dough.
Use a fork to create a swirl (this will be the “marbling effect”).
Bake for 1 hour.
