Fool-Proof Ginger Molasses Cookies

These ginger molasses cookies are guaranteed to be a success. Makes about 25 cookies.

Ingredients:

- 2 and 1/4 cups flour

- 1 large organic egg

- 1 teaspoon minced candied ginger

- 2 teaspoons ground ginger

- 1 teaspoon ground cinnamon

- 1/2 teaspoon ground cloves

- 1 teaspoon baking soda

- 1/4 teaspoon salt

- 1 stick soft, unsalted butter

- 1 cup of light brown sugar (plus a 1/2 cup for rolling)

- 1/3 cup Molasses


Directions:

1. Line two baking sheets with parchment paper.

2. Preheat oven to 375 degrees Fahrenheit.

3. Add the flour, ginger, baking soda, salt, cloves, and cinnamon in a baking bowl. set aside.

4. Use a stand mixer on medium speed to beat the butter and sugar together for 2 minutes. When a smooth paste forms, add the molasses and egg and continue to beat until a lighter paste forms (another 2 minutes).

5. Add the flour mixture to the paste and mix on low.

6. Form the dough into one inch balls and roll them in the remaining sugar.

7. Place balls on cookie sheet (about 1-2 inches apart) and bake for 12-14 minutes (I like chewy cookies, so I bake them for 12 minutes).
