Flower Fairy Approved Banana Bread

This banana bread recipe is guaranteed to make a beautiful loaf! Add chocolate chips and/or walnuts for extra flavor.


Ingredients:

1 cup cane sugar

Vanilla from one vanilla bean 1 stick unsalted butter 2 organic eggs 3 ripe bananas 1 tablespoon oat milk 1 teaspoon cinnamon 2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1 dash of salt

1/2 cup chocolate chips (optional)

1/2 cup broken-up walnuts (optional)


Directions:

  1. Preheat the oven to 325 degrees Fahrenheit.

  2. Butter a loaf pan (9 x 5 x 3 inches) - I also like to add some breadcrumbs

  3. Mix the cane sugar and butter until a fluffy paste forms.

  4. Add one egg at a time; continue mixing. 

  5. In a separate bowl, mash the ripe bananas with a fork.

  6. Mix in two tablespoons of oat milk and 1 teaspoon of ground cinnamon.

  7. Add the banana mixture to the fluffy paste and mix until combined.

  8. Add the flour, baking powder, baking soda and salt. 

  9. OPTIONAL: Add 1/2 cup of chocolate chips and/or 1/2 cup of walnuts.

  10. Pour batter into buttered loaf pan and bake for 1 hour.

  11. Let cool for at least 10 minutes before removing from pan.

  12. Sprinkle with powdered sugar.
