Make this warm and cozy harvest soup on any rainy day - it is sure to heat up your heart and soul! BONUS recipe: Dairy-free German pancakes to be served with hot apple sauce.
Ingredients:
- 1 Acorn Squash
- 3 large Carrots
- 1 large Potato
- 1/2 large onion
- 1 clove of garlic
- a chopped up piece of fresh ginger (about the size of a peanut)
- 1 orange
- 1 liter of chicken stock (I like to use organic chicken bone broth)
- 2 tablespoons olive oil
- Salt
- Cayenne Pepper
Directions:
1. Chop the ginger and garlic into small pieces; then, cut all vegetables into bite-sized chunks.
2. Sauté the ginger, garlic, and vegetables in 2 tablespoon of olive oil until slightly glossy.
3. Add one liter of chicken stock.
4. Cook the vegetables for approximately 20 minutes or until soft.
5. Use a kitchen wand to purée the vegetables in the broth.
6. Add the fresh-squeezed juice of one orange.
7. Season with ample salt and add a dash of cayenne pepper (or however much is desired)
BONUS recipe: Dairy-free German Pancakes (Pfannkuchen)
Ingredients:
- 2 eggs
- 200 mL oat milk
- a dash of salt
- a dash of brown sugar
- 200 g unbleached flour
- 60 mL sparkling water
- Ghee for frying
Directions:
1. Mix the eggs with the oat milk, sugar, salt, flour, and sparkling water until a smooth dough is formed. If needed, add some additional water or flour to get the right consistency.
2. Heat up a tablespoon of Ghee in a frying pan.
3. Use a soup spoon to add dough to the hot Ghee.
4. Swirl the dough around until a thin pancake is formed. Fry each side of the pancake for 1-2 minutes.
5. Serve with hot apple sauce (store-bought or homemade).
