Biscuits à la Lavande

Our orange tree is currently blooming and its almost ambrosial smell is making me want to eat all things orange flavor. These lavender orange cookies are a beautiful tea time snack and are so easy to make. Makes about 25 cookies.

Ingredients:

  • 4 organic egg whites

  • Dash of salt

  • Vanilla from one vanilla bean (or 1 teaspoon vanilla extract)

  • 3/4 cups cane sugar

  • 1.25 sticks of unsalted butter

  • 3/4 cups all-purpose flour

  • 2 table spoons orange liqueur (I used Grand Marnier)

  • 1-2 tablespoons of dried lavender


Directions:

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Using a stand mixer, beat the egg whites with the sugar, salt, and vanilla WITHOUT stiffening it. Carefully melt the butter in a small pot. Slowly add the flour, butter, and orange liqueur to the beaten egg whites.

  3. Cover a cookie sheet with parchment paper.

  4. Using a wooden spoon, "paint" circles of dough onto your parchment paper (~ 2 inch diameter and 1/8th inch thick). Sprinkle dried lavender onto each circle.

  5. Bake for 10 minutes.

  6. Once baked, immediately remove your cookies from the baking sheet and place them over a rolling pin or empty bottle. Let cool for 15 minutes.
